My father's family (from the Dalmatia region of Croatia) ate roast baby goat on Easter Sunday. It was cooked the same as baby lamb. Cut the dressed animal into serving sized pieces and rub with olive oil, minced garlic, rosemary leaves, salt and pepper. Roast in a slow oven for 1 to 2 hours (depending on size). Quartered potatoes can be added to the pan and roasted with the meat. Ideally the kid should be just at the age of weaning. If it's a little older, using a female is recommended. It tastes like a cross between lamb and veal.
